Iconic New York restaurant Carbone is facing criticism after reports surfaced that it concealed its official “B” health grade, violating city regulations.
A July 2025 inspection found multiple hygiene issues, including improper food temperatures, dirty dishes, and poor sanitization practices. The New York City Health Department awarded the restaurant 14–27 violation points, placing it firmly in the “B” category.
Despite regulations mandating visible display of ratings, Carbone allegedly hid its downgraded score. The restaurant has not issued a public statement. Carbone has a history of teetering between an “A” and “B” over the past three years, raising questions about compliance.
